• Zeef het geheel en vang het vocht op in een aparte kom.
• Voor deel 2 van de zoetzure gel heb je ongeveer 1000 ml nodig.
• Bewaar de rest van dit vocht goed in de koelkast, voor de bereiding van de champagne vinaigrette heb je nog 750 ml nodig!

• De bereiding van de zoetzure gel bestaat uit 2 delen. Het resultaat van deel 1 heb je ook nodig bij de bereiding van de champagnevinaigrette. Bewaar daar dus iets van!
• Kneus de sereh, snijd de gember en peper.
• Doe ze in een grote pan en voeg hier ook de
azijn, witte wijn, suiker, sjalot, knoflook, limoenblad, citroen, peperkorrels, limoen aan
toe.
• Breng het geheel aan de kook en laat het ruim 5 minuten goed doorkoken.

in een aparte kom.
• Voor deel 2 van de zoetzure gel heb
je ongeveer 1000 ml nodig.
• Bewaar de rest van dit vocht goed in
de koelkast, voor de bereiding van de
champagne vinaigrette heb je nog
750 ml nodig!
